Tasty Tagine!

ok, so this is for Zoe!!!

You will need:

Chicken/lamb
A jar of tagine sauce (i buy sainsbury's own almond and apricot but you can get them everywhere)
mixed peppers
cous-cous! (i buy ainsley harriets morrocan couscous to go with this!)

So yes, i do cheat as most of it comes out of a packet, but lets face it, when you've got in from a busy day and your kiddie is squeeling for his/her tea you want something quick and easy!!!

So firstly...

  • Pre-heat oven to 200 degrees c, oil a roasting dish and wack in the oven
  • heat up a non stick wok type pan with about a tsp of oil (i use vegetable oil)
  • roughly chop your peppers and chuck into the roasting dish with heated oil, put back in oven
  • chop your chicken/lamb into chunks/strips however you like it!
  • brown off the meat till is cooked all the way through.
  • add your jar of tagine sauce and simmer for 15/20 minutes
  • make up your cous cous, pour the sachet into a jug and fill with 150ml of boiling hot water, leave for 5 mins and then fluff with a fork.
  • retrieve your peppers from the oven
  • dish up!!
Quick and easy 20 minute meal, really fills you up and is soooo yummy!!! My daughter LOVES this!! she is a couscous fiend!
