Funky Frittata!

Hiya!

This is one of my daughters most fave things to eat, i make a massive batch of it and she has half for her tea, half for her lunch cold the next day!!

You will need:

  • a medium sized ovenproof dish (i have a glass one that i make Immys in)
  • 2/3 Large eggs, whisked!
  • vegetables, boiled - This can be whatever you like, the beauty about frittata is that you can chuck anything you have into it!!!
  • 1 potato, boiled and slightly mashed
  • some baked beans!
Pre-heat your oven to around 200°C
Chop potatoes into quarters and put on to boil for mash.
Chop your veg into chunks/strips however you like it and Boil all your veg until they are blanched.
Add potatoes and veg together and pour into your oven proof dish.
Whisk your eggs and pour over the top of your vegetable mix.
Cook in oven for 15/20 minutes.
Cook some beans and serve.

I usually leave it to solidify abit more and slice (like bread) into fingers. Wrap half up in cling film once cooled and stick it in your fridge for the next day.
