Havent been on in a while!

Sorry i havent been on in a while, its been manic what with xmas shopping, Imogen pouring water on my laptop (resulted in not being able to type!!) and just general mummy stuff!! I promise i will post new and excitng food ideas for you all very very soon!

Funky Frittata!

Hiya!

This is one of my daughters most fave things to eat, i make a massive batch of it and she has half for her tea, half for her lunch cold the next day!!

You will need:

  • a medium sized ovenproof dish (i have a glass one that i make Immys in)
  • 2/3 Large eggs, whisked!
  • vegetables, boiled - This can be whatever you like, the beauty about frittata is that you can chuck anything you have into it!!!
  • 1 potato, boiled and slightly mashed
  • some baked beans!
Pre-heat your oven to around 200°C
Chop potatoes into quarters and put on to boil for mash.
Chop your veg into chunks/strips however you like it and Boil all your veg until they are blanched.
Add potatoes and veg together and pour into your oven proof dish.
Whisk your eggs and pour over the top of your vegetable mix.
Cook in oven for 15/20 minutes.
Cook some beans and serve.

I usually leave it to solidify abit more and slice (like bread) into fingers. Wrap half up in cling film once cooled and stick it in your fridge for the next day.

Immys birthday cake!

Hiya Everyone!!

Thought i would just share with you some pictures of Immys 1st birthday cake. I'm still so proud of it 4 months down the line. I made eveything by hand (with some help from my friend!) it was sooooo tasty, just a plain vicky sponge with buttercream and raspberry jam covered in royal sugarpaste icing from my local cake shop!! yuuuuuuuuuummy!!!!!!!!

BLW

Hi,

I wanted to write a little about BLW (baby led weaning). I feel i have learnt so much from doing this with Immy, she was weaned at 5 and a half months and had purees only for a short while. She was fed up with me feeding her so one day i decided to give her a meal un-pureed, chopped up and veggies over boiled so they were nice and soft. She ate the whole lot, without a fuss. She gagged every now and again, but i let her sort herself out (i was with her before anyone says anything!!) and she was fine.

My daughter loves eating by herself, always has done. She has been using a fork since she was 9 months old but has just mastered how to get a spoonful of rice krispies into her mouth without them ending up on her pjs!!!

Here is a list of great starting BLW Food!:
  • boiled vegetables (i always boil them a little bit longer than they should be done so they are lovely and soft - easily chewable for bare gums!!) 
  • chunks of cheese
  • toast
  • jacket potatos with cheese and low sugar&salt beans
  • chicken strips
  • homemade fishfinger/fishcakes
  • baked pears and apple pieces
  • raisins (Immys fave snack!!)
  • peas and sweetcorn, great for mastering that all imporatant pincher grasp!
  • Sausages - i always make sure i buy very good quality ones with more than 80% meat. Asda extra special ones are lovely and they have a great range! Alternatively get some from your butchers
  • meatballs - you can make your own so easily!
  • cucumber/celery stripes - lovely for teething as you can leave them in the fridge cut up and pull them out as and when
  • fruit!!! any fruit is fab, orange segments are always a winner, as is banana, and whole pear!!
I hope this has helped if you are unsure whether to start BLW! Its lovely when they get abit older and eat the same meal as you, discovering different flavours and textures with their tongue. Its just GREAT!!!!!!!!

Tasty Tagine!

ok, so this is for Zoe!!!

You will need:

Chicken/lamb
A jar of tagine sauce (i buy sainsbury's own almond and apricot but you can get them everywhere)
mixed peppers
cous-cous! (i buy ainsley harriets morrocan couscous to go with this!)

So yes, i do cheat as most of it comes out of a packet, but lets face it, when you've got in from a busy day and your kiddie is squeeling for his/her tea you want something quick and easy!!!

So firstly...

  • Pre-heat oven to 200 degrees c, oil a roasting dish and wack in the oven
  • heat up a non stick wok type pan with about a tsp of oil (i use vegetable oil)
  • roughly chop your peppers and chuck into the roasting dish with heated oil, put back in oven
  • chop your chicken/lamb into chunks/strips however you like it!
  • brown off the meat till is cooked all the way through.
  • add your jar of tagine sauce and simmer for 15/20 minutes
  • make up your cous cous, pour the sachet into a jug and fill with 150ml of boiling hot water, leave for 5 mins and then fluff with a fork.
  • retrieve your peppers from the oven
  • dish up!!
Quick and easy 20 minute meal, really fills you up and is soooo yummy!!! My daughter LOVES this!! she is a couscous fiend!

Easy Peasy White Loaf!!

This bread recipe takes no longer than an hour and tastes yummy with some butter and jam or dipped in a lovely warm winter soup!

What do you need?

  • 500g strong white flour (bread flour)
  •  sachet fast-action dried yeast
  • a pinch of salt
  • bout 350ml warmish water 
This is so easy, all you have to do is mix all the ingrediants together, knead it for 5/10 mins, cover it clingfilm for 20mins or so and then wack it in a loaf tin for 30 mins (pre-heat oven to 22o degrees c) and you have a lush little loaf of bread, easy peasy!!!!! x

Something simple!

Hi!

Today for dinner we are having Roast sausages with Roasted winter vegetables and gravy!!

I love this as you dont have to be neat with it and it only takes around 30-40 minutes!!

All you need is:

A pack of good quality sausages (I am using pork and apple sausages from my local butchers)
Swede
Potatoes
Carrots
Curly kale
Oil (Olive or vegetable)

  • Pre-heat your oven to 180˚c/200˚c
  • When your oven is up to temp, Oil a roasting dish and put in oven, i usually use vegetable oil, around 2 table spoons.
  • Roughly chop the veg and boil for 6 minutes (just so its softer when roasting)
  • Add the vegetables to the roasting dish, be careful as the oil is very very hot, set the timer for 10 minutes
  • After 10 minutes, add the sausages and set the timer for 20 minutes
  • If you would like to add some clear honey to it then just drizzle some over the top, nice and sticky!!
  • Check your sausages, my oven gets very hot therefore cooks them quicker, your oven may be different so you will need to cook them for longer.
  • boil/steam the Kale until soft!
  • Use the water from the kale and vegetables to make your gravy, much more tasty!!!
  • Retrieve from the oven and serve, your roast vegetables should be lovely and golden, as should your sausages!
..And there you have it! 30 minute meal, and its REALLY tasty! Just like an alternative roast dinner, and great for baby led weaning.

Alternatively, you could make some carrot and swede mash to go with this, if you are making puree's then you can use it to make a batch for your bubba at the same time!

A little about myself:

My name is Rachel and i am 21. I live in Wiltshire with my fiancé, Liam and our 1 year old daughter called Imogen (Immy). I organise meets for mums and mums to be in Swindon, and have made some brilliant friends by doing this!

My Fiance is a Chef and i am a stay at home mum (for the time being, although would love to not have to work!) 

My interests are playing with my daughter, seeing friends and family, art and craft and cooking!
