What do i need?
- 2 cans of chickpeas
- 2tbsp lemon juice
- 1onion (very finely chopped)
- 2 cloves of garlic, crushed
- 1tsp ground coriander
- 1tsp ground cumin
- 1tbsp fresh parsley, finely chopped
- 2tbsp plain flour
- 1-2 tablespoons olive oil
- Drain and rinse the chickpeas and lightly blitz in blender until looks like breadcrumbs, not purée.
- Add the lemon juice, onion, garlic, spices and herbs and mix well.
- Roll a small handfuls of the mix into a balls then flatten slightly.
- heat oil and fry the balls in batches for 2-3 mins on each side.
- Drain and serve.
