Falafel

Ahh falafel, one of my most fave things to eat. When i can be bothered to make them this is the recipe (but marks and spencers ones are lush to!!!)

What do i need?

  • 2 cans of chickpeas
  • 2tbsp lemon juice
  • 1onion (very finely chopped)
  • 2 cloves of garlic, crushed
  • 1tsp ground coriander
  • 1tsp ground cumin
  • 1tbsp fresh parsley, finely chopped
  • 2tbsp plain flour
  • 1-2 tablespoons olive oil
How do i make it?

  1. Drain and rinse the chickpeas and lightly blitz in  blender until looks like breadcrumbs, not purée.
  2. Add the lemon juice, onion, garlic, spices and herbs and mix well.
  3. Roll a small handfuls of the mix into a balls then flatten slightly.
  4. heat oil and fry the balls in batches for 2-3 mins on each side.
  5. Drain and serve.
Serve in a pitta bread with some lettuce and cucumber, and a blob of hummus or mayo!! 

Vegetable Rosti!

This is an old recipe i found in one of my many magazine clippings! Hope you enjoy it, its soo tasty!

What goes in it?

  • 2tbsp of olive oil
  • 2 onions coarsely chopped
  • 100g peeled and grated potato
  • 100g peeled and gated SWEET potato
  • 100g finely sliced courgettes
  • 1 beaten egg
  • 2tbsp plain flour
How do i make it?

  1. Heat oil in a frying pan and add all the onion, potatos and courgette..fry for 5 minutes until all soft.
  2. Leave to cool slightly and add mixture to bowl with egg and flour.
  3. Shape into balls, you should get around 8, and flatten.
  4. Put the rosti's back into the frying pan (adding more oil if necessary) and cook till golden brown on each side
  5. drain the oil on kitchen roll and serve with salad!
Great way to use up old veg!!

Savory Mince!

Hello all!!

I have been digging around in my old recipe book and came across a handful of scrummy recipe ideas for you and your family!

First of which is my all time fave thing to eat! My comfort food! SAVORY MINCE!!

What goes in it?

  • 300g lean minced beef
  • 100g sage & onion stuffing mix
  • 1 onion, diced
  • 100g mushrooms, sliced
  • 1 can baby carrots, drained
  • 1 tbsp tomato ketchup
  • 2 Beef Oxo Cubes
  • 300ml hot water
  • large frying pan with lid

How do i make it?

  1. Heat the frying pan then add the mince and cook over a moderate heat until browned.
  2. Add the sage & onion stuffing mix , diced onion, sliced mushrooms, tinned baby carrots and tomato ketchup.
  3. Pour in the hot water and add crumbled the Beef Oxo Cubes.
  4. Stir well and put the lid on the pan and allow to simmer away until cooked and most of the liquid absorbed into the meat mixture.
Serve with rice or in a giant yorkshire pudding!! YUM!

Simple Ragu!!

Sorry i havent posted in a while (again!!!)

thought i would come back with an easy quick and simple ragu recipe.. You could add mince to it, use it as a pasta sauce or have it with meatballs!!!

You will need:

6 tomatos (i used on the vine reduced ones that were quite squidgey)
2 Carrots - grated
2 sticks of celery - chopped finely
a handful of button mushrooms - chopped
Handful of fresh basil - roughly torn/chopped
1 can of tinned chopped tomatos
1/2 pint veg stock

Chop tomatoes into quarters and de-seed
put them in a non stick sauce pan with your veg stock and bring to the boil. Reduce for 5 mins and then keep on to simmer

Add your grated carrot, celery, basil, mushrooms and simmer for 5 minutes.

Blend your ingredients while on the heat till thick and 'creamy'

add your chopped tomatos and leave to simmer for 5 minutes.

You could blend it again but i like my tomato sauce chunky!!

Season with salt and pepper!
